Today is a public holiday for Selangor in conjunction with the Sultan's Birthday. I didn't expect that I have to work on a public holiday! I've actually committed myself to mend the booth at Bangsar Village every weekday from 10am to 1pm until 28th!!! I forgot that I also have to work on Christmas Day! So if you've nothing to do on Christmas Day, do drop by and give me a hug or pressies. I need some form of consolation. What a way to spend my day during a public holiday. And because KL is still working, I've got numerous calls on work today...haih. To make matter worse, I was stuck in a bad crawl from the 2nd NPE toll to Bangsar. There was a road block. Why is there a F$#@ing roadblock?!! I heard that there's another demonstration. It took me 30 minutes on a 5-minute journey. Lucky McD breakfast accompanied me in my car. After I ended my shift at 2pm, I bought some groceries for tonight's masterpiece. I am cooking herb-roasted chicken with potatoes and cheese-baked mussels. To top it up, I am boiling the winter melon soup! Yummy...
Winter Melon Soup
Ingredients:
1. Medium Size Winter Melon (yellow skin)
2. Spare Ribs
3. Dried Red-Skinned Dates (Hong Jou)
4. Salt to taste
5. Water (2 litres) - for 2 meals for 4 persons
Method:
1. Wash spare ribs and melon clean.
2. Boil some water and then put in the spare ribs.
3. Simmer for a while and then pour away the water leaving the spare ribs in the pot.
4. Add in the remaining water, add the winter melon and dates and put to boil.
5. Boil with high heat for half an hour, and then turn to low heat for another 1 hour.

Herb-Roasted Chicken with Potatoes & Cheese-Baked Mussels.
Ingredients (Chicken):
1. 4 chicken thighs
2. 4 potatoes
3. Mixed herbs, Basil leaves & Rosemary
4. Salt, Sugar, Pepper, HP sauce, Soya sauce, Oyster sauce
5. Sesame oil
6. Oil
7. Butter
8. 3 Garlic cloves
Method:
1. Wash chicken thighs clean.
2. Marinade with items 3&4. Make sure ingredients are well marinated into the chicken.
3. Cling wrap and put it into the fridge for 4 hours.
4. Heat up the pot with butter & oil. Put the chicken thighs into the pot when oil is hot.
5. Fry the skin of the chicken till golden brown. Lift chicken and pour away oil.
6. At the same time, boil potatoes for 5 minutes with some salt. Pour away water.
7. Line a baking tray with foil. pour the potatoes in and coat with some butter.
8. Roast potatoes in oven for 10 minutes at 200 degrees until edges are slightly golden.
9. Prepare gravy using items 3,4,5&8 and add 150ml of water with some cornstarch.
10. Bring gravy to boil and add in chicken & potatoes & simmer for 10 minutes.
Ingredients (Mussels):
1. Mussels
2. Garlic (finely chopped)
3. Cheese (singles)
Method:
1. Wash mussels and dry them with a napkin/cloth.
2. Sprinle garlic on top and top with a small slice of cheese.
3. Bake at 180 degrees for 8 minutes in the oven.
Garnish with fresh lettuce/salad leaves & boiled french beans.

There you have a self-tried recipe. I do not have an exact amount of salt or sauce. It's entirely up to you but be moderate. Just keep everything within 1 or 2 teaspoons. The taste is great despite it being my first time trying this. The mussels were great and cheap. You can get 5 mussels for around RM3 @ Village Grocer in Bangsar Village.
