Spaghetti Bolognese with Cheese Kabana

Speaking of cooking, it has been quite sometime since I last cooked a meal. The last time I cooked was a few months ago, playing mom. Friday, 1st of Jan 2010 sets the mood for some real cooking! Dunno why, I've always like 2 types of spaghetti style - bolognese and aglio olio. Thus, I decided to do my own version of spaghetti bolognese!


Ingredients needed...


This recipe serves 5 hungry people!
  • 1 can of tomato pasta sauce
  • 100g of tomato ketchup
  • 1 pack of spaghetti
  • 3 onions
  • basil
  • 2 slices of bacon
  • 3 big fresh tomatoes
  • 1 can of button mushrooms
  • 300g minced meat (I used pork)

On the sides, I have Hans Deli Selction Twin Cheese Kabana which I got from Emily when we were in Sydney a month ago. I don't think you can get it here but it can always be replaced with any bratwurst or salami!


Marinate the minced meat...

I used some sea salt & freshly ground black pepper. Whole peppercorns freshly ground with a pepper mill deliver more flavour than pre-ground ones. Mix in well and leave it in the fridge for about an hour or two.

My mom taught me a good tip on cooking meat. Boil about 2 cups of water and then put in the minced meat and let it cook. Once the meat is cooked, pour away the water. This will get rid of the meaty odour.

The various steps....

After which, put the cooked meat aside and using the same pot, put in some oil and cook the bacon (which have been diced). Then, put in the cooked minced meat, onions and button mushrooms. Stir fry it for a while before adding the tomato pasta sauce. Add in another 2 cans of water, 100g of tomato ketchup and fresh tomato which has been sliced into the pot.

Put the sauce mixture with the meat to a boil. Lower the heat and simmer for 20 minutes. Before serving, add in the dry basil leaves, salt and pepper to taste. Two important ingredients not to be missed is a little sugar which brings out the taste of the tomato sauce and a teaspoonful of soy sauce! Trust me, it tasted better with a little soy sauce.


Cooking the spaghetti...


As for cooking the spaghetti. Boil a pot of water, add in a little butter and salt. The salt gives the spaghetti some flavour and the butter avoids the spaghetti from sticking together. Put in the spaghetti and boil around 20 minutes. Test the noodles before draining the water to make sure it's cooked to al dente. After draining the water, I drizzled a tablespoon of homemade lemon oil into the spaghetti.


Cheese Kabana

This is for the toppings. The cheese kabana has been sliced and pan seared with a little butter. During the process, I've already been picking up some slices and indulging in them. It tasted like sausage with cheese fillings. Perfect combination with the pasta.


The finished product...

The traditional bolognese is a dry tomato sauce with meat but I like my sauce with more water content and thus my own version of bolognese. I think this is one of the easiest dish that everyone can try. Although it's nothing glitzy compared to the ones served in the italian restaurants, it's inexpensive and good!

Try it at you own risk! (the worst that can only happen is unpalatable taste) haha....
